The History of Conveyer Belt Sushi

At Sushi Hana’s Japanese restaurant in Bothell, we use a sophisticated conveyor belt system to deliver our food to our customers quickly and easily. This may seem like a fairly modern convenience, but did you know that the first sushi conveyor belt restaurant was opened in 1958?

He may have had a few bugs to work out yet, but conveyor belt sushi pioneer Yoshiaki Shiraishi was delivering sushi on a mechanized track before many of our customers were even born. He called his restaurant Mawaru Genroku Sushi, and after the first run in a single location in Osaka he managed to put together a chain of conveyor belt restaurants as big as 240 locations throughout Japan.

Today, conveyor belt sushi is called kaitenzushi, or “rotating sushi”. It represents a 240 billion yen industry in Japan, not to mention the similar businesses that have been springing up around the rest of the world. Come and be a part of this trend at Sushi Hana today!
