A sushi chef, known in Japan as an itamae, has to go through a lot of culinary training. True sushi devotees will make a trip to an authentic sushi training program in Japan, which can be both grueling and pricy. It is here that they learn food safety and handling. They must be able to select the freshest pieces of seafood, cook rice to perfection, pair different flavors in a single roll, and easily shape sushi to look pleasing on a plate. A student in a Japanese program may have to demonstrate near-perfect skills before they can practice in a real sushi restaurant like Sushi Hana.
